  • When buying, you should press the beef with your hand; if it is good beef, it will have a firm texture and good elasticity, not sticky to the hand, and there should be no unpleasant or abnormal odor.
  • You should choose small, tender pieces of meat, with a fine grain, and when pressed, they should have good elasticity.
  • Avoid buying beef that has a pale green color or dark red color, with deep yellow fat, white spots on the flesh, and feels mushy and slimy to the touch.

How to choose fresh and delicious giang leaves

  • Choose giang leaves that are dark green, as these are larger and older leaves that will have a tastier sour flavor compared to lighter colored leaves.
  • Select leaves that are intact, not bruised, and do not have too many white or black spots on them.
  • If you do not use all the giang leaves you bought, you should immediately store them in the refrigerator. Do not wash them before storing, as this will cause the giang leaves to spoil quickly.

How to prepare Stir-fried Beef with Giang Leaves

  • Prepare and marinate the beef

    After buying, rinse the beef with clean water. To eliminate the odor of the beef, take 1 piece of ginger, smash it, then rub it all over the beef, and let it sit for about 2 minutes.

    Then, rinse the beef with diluted salt water and then wash it again with clean water. Marinate the beef with 1/2 tablespoon of seasoning, 1/2 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate, and let it sit for about 30 minutes for the beef to absorb the seasoning.

    How to clean beef properly, without odor:

    • Method 1: Roast 1 piece of ginger until cooked, scrape off the burnt outer skin, then crush the ginger and rub it onto the beef, keeping it for about 3 minutes before rinsing with clean water.
    • Method 2: Alternatively, you can use vinegar or white wine to wash it briefly, which also helps to clean and eliminate the odor of beef effectively.

    Peel and crush the garlic. Wash the red chili and chop it finely.
