  • You should choose okra that is bright green, visually appealing, and of medium size, about the size of your thumb, as this is the best time to eat, not too young and not too old.
  • Fresh okra will have a thin layer of fine hairs covering the outside, and the tip of the stem will still be oozing sap. When you hold it, it should feel firm.
  • Do not buy okra that has soft, withered skin or strange black spots on the skin, as this indicates old okra that is about to spoil.
  • Additionally, you should avoid okra that is pale green or oversized, as they tend to be older and may taste bitter.

  • To choose good beef, you should observe the color of the meat. Fresh and delicious meat usually has a bright red color, and the beef fat is light yellow.
  • You should choose small, tender pieces of meat with a fine texture, and when you press your finger on it, it should have good elasticity.
  • If you see small white nodules on the meat that are easy to detach, it could very well be parasites. You should also limit buying small pieces of meat that have been pre-cut, as they often contain parasites.

How to prepare Stir-fried beef with okra

  • Preparing beef

    Wash the purchased beef with diluted salt water, then rinse with clean water, drain, and slice into thin pieces for easy consumption.

    How to remove the smell of beef:

    • Method 1: Roast a piece of ginger until cooked, peel off the burnt outer skin, then pound the ginger and rub it onto the beef, leaving it for about 3 minutes before rinsing with clean water.
    • Method 2: Since beef does not have a strong odor, you can also rinse it briefly with diluted salt water. Do not wash too thoroughly as it will remove the nutrients in the meat, making it less tasty.

    Put all the okra into a pot with 500ml of water and bring to a boil. Boil for about 5 minutes on high heat until the water boils, then remove and place into a bowl of ice water for about 5 minutes. Transfer the okra to a basket and let it drain.
