- You can lift the pigeon’s wings and press on the breast; if the meat is thick and the breast is soft, then this is a good pigeon.
- You should avoid choosing pigeons that are pale, have an odor, soft and mushy meat, and are not firm. Additionally, do not choose those that are too small or too large as the meat will not be tender and will not taste good.
How to choose fresh pumpkin
- You should choose pumpkins with fresh stems, bright-colored skin, and feel heavy when picked up.
- For pre-cut pieces of pumpkin, you should pay attention to choose pieces that are bright yellow, deep in color, and have dense flesh.
- Avoid choosing pumpkins that are damaged, bruised, or have an unusual smell.

How to prepare Sweet Pumpkin Pigeon Porridge

Prepare the ingredients
After washing the pigeon, soak it in saltwater for about 5 – 10 minutes to eliminate any odor. Then, cut the pigeon into bite-sized pieces.
For the ginger, peel and wash it thoroughly. Then, slice half of the ginger into thin strips, and finely chop the other half.
Carrots and pumpkin should be peeled and washed after purchasing. Next, chop them into small cubes and let them drain.
Green onions and cilantro should have their roots removed, washed, and drained. Peel the garlic and finely chop it.

Stir-fried pigeon meat
First, place a pan on the stove, heat the pan and add 1 tablespoon of cooking oil. Once the oil is hot, add minced garlic and ginger and sauté until golden, then quickly add the pigeon meat to stir-fry until the meat is firm and the smell reduces.
Season the meat in the pan with 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, and stir well. You can adjust the seasoning at this stage to your taste!

Cooking the porridge
First, add the roasted rice from step 2 into the pot along with 1 liter of water, cook over medium heat until it boils vigorously, then reduce to low heat, cooking the porridge until the rice grains burst and become soft and slightly mushy.
Then, add the sautéed pigeon meat, season with 1/2 teaspoon of salt, 1 tablespoon of fish sauce, and stir well.
Next, taste and adjust the seasoning if needed, then continue to cook for about 10 minutes for the pigeon meat to release its sweetness.
Next, add the diced pumpkin and carrot, cover, and continue to simmer the porridge over low heat until the pumpkin and carrot are tender.

Note:
- When cooking porridge, stir continuously to prevent it from sticking to the bottom of the pot.
- Only stir in one direction to avoid the porridge becoming mushy.
