How to choose fresh gourd
- You should choose gourds that are straight in shape, of moderate size, with a bright green skin and a thin layer of fine hair on the outside.
- Fresh gourds usually have a fresh stalk tightly attached to the fruit, when picked up they feel heavy, and pressing on the body of the gourd will feel soft, not spongy.
- Avoid choosing those with a dark green color, strange black spots on the skin, and if pressed by hand they feel mushy as they are often about to spoil, which will be unsafe to eat.
- Do not choose those that are too large as these are usually overripe, and cooking them will lose their deliciousness.

Prepare the ingredients
Pork bones, after buying, you wash them with diluted salt water to avoid any odor, then rinse several times with water until clean and let them drain.
Next, you put the pork bones into a pot, add enough water to cover the bones and 1/2 a spoon of salt, then place it on the stove to boil. After that, you remove the pork bones and discard the boiling water.
The pumpkin, after buying, you peel off the skin, then cut into bite-sized pieces, rinse several times with water until clean and let it drain.
Green onions, you wash them clean, chop the leaves finely, and crush the bulbs!

Cooking pumpkin soup with bones
Place a pot on the stove, add 1 tablespoon of cooking oil, then add crushed shallots and sauté until fragrant over medium heat.
Next, add the pre-prepared bones and stir-fry until they are seared on medium heat. Then add 1/2 teaspoon of salt, 1/2 teaspoon of fish sauce, stir a few times, and then add 1 liter of water, simmer the bones for about 10 – 15 minutes until the meat is tender.
When the meat is tender, add the pumpkin, cook for another 4 – 5 minutes until the pumpkin is just cooked, then add 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and adjust the seasoning to your family’s taste!
Finally, add chopped green onions and a little ground pepper to the soup pot and turn off the heat!
