How to make Squash Soup with Dried Shrimp and Mushrooms

  • Prepare the ingredients

    Rinse the dried shrimp briefly in water, then place the shrimp in a bowl of warm water and soak for about 15 minutes until the shrimp soften.

    Peel the squash, wash it thoroughly, then cut it in half lengthwise, and slice it into thin pieces, about 1/4 finger thickness.

    Chop off the roots of the scallions and cilantro, wash them and let them drain. Separate the scallion heads and chop the scallion leaves together with the cilantro.

    Cut off the mushroom stems, wash them, then soak them in diluted salt water for about 15 minutes. Rinse them again with water and let drain.
