How to choose delicious minced meat

You can choose to buy whole pieces of pork and ask the seller to grind it for you, or bring it home to grind with a meat grinder to ensure safety and flavor.

  • You should observe the overall appearance, choose meat with a balanced ratio of lean and fat, not too much fat, not too much lean so that when ground and cooked it will not be dry.
  • First, you must choose fresh meat. The color of good meat is bright pink, not too red or too pale. Pork that is pale, greenish, and has a foul smell is spoiled, so you should not choose this type of meat.
  • Pork that is firm and elastic is good meat. You can check by pressing your finger into the meat; if it springs back immediately, is not slimy, and does not leak water or fluids, then it is good.

  • Prepare and toast the rice

    Wash the rice clean, let it dry a bit, then put it into a pot to toast for aroma.

    Toast until the rice turns golden and fragrant, then add 2.5 liters of water to cook the porridge.

  • Prepare the blood

    Wash the blood thoroughly, blanch it briefly in boiling water for 10 minutes to eliminate any unpleasant odor.

    Then cut it into bite-sized square pieces, each about 3cm thick.

  • Roast the minced meat

    Take a pan, add 1 tablespoon of oil, wait until the oil is hot then add the minced meat to roast. Once the meat has firmed up, turn off the heat.

  • Cooking porridge

    After about 30 minutes, when the porridge boils and the rice grains start to soften, you can add the pre-roasted minced meat to cook together. Cook for another 20 minutes until the rice is really soft.

    When the porridge boils again, reduce the heat, skim off the foam and floating fat on top, then start seasoning. Add 1 teaspoon of salt, 1 teaspoon of sugar, and 4 teaspoons of seasoning powder. Add the blood into the porridge and turn the heat up to cook with the porridge. Cook for another 5 minutes, when you see the blood starting to float, turn off the heat.

    Place a little bean sprouts at the bottom of the bowl, scoop the porridge into the bowl. Sprinkle a little fried onion, chopped scallions, ginger, along with some pepper and basil leaves on top, and it’s ready to enjoy.

    Tip: You should cook the porridge a bit watery so that it can be eaten with noodles and fried dough sticks for better taste.
