How to choose fresh chives

  • You should pay attention to choosing fresh bunches of chives that are still green and avoid those with yellowing or wilting leaves.
  • Fresh chives are usually crispy; you can break off a leaf, and if it breaks cleanly, it’s good. A smooth leaf surface indicates freshness; avoid choosing leaves that are not intact, are rotten, or have insect bites.
  • You can buy chives at grocery stores, supermarkets, or traditional markets. Pay attention to check the packaging information regarding the origin and choose to buy from reputable stores!

How to prepare Pork Blood Soup with Chives

  • Prepare the pork blood

If you buy liquid pork blood, when you get home, mix it with clean water in the ratio of 1 part blood to 1.5 parts water. Then use a spoon to stir gently.

When the blood mixture is well combined, let it sit for about 10 minutes until it solidifies. At this point, you can easily use a knife to cut the blood into small, bite-sized pieces.

Tip: It is best to cut the blood into rectangular pieces of moderate size, helping it cook evenly without falling apart.

Place a pot of water on the stove, wait for it to boil, then add the blood and cook until you see the water boiling again, then use a ladle to remove the foam from the pot. Check to see if the pig’s blood is fully cooked, and depending on your taste, you can season it to your liking!

Continue to add chives to the pot, wait for the water to boil again before turning off the stove.

    Tip for you:

    • You should wait for the water to boil before adding the blood to blanch it over medium heat, helping the blood firm up immediately.
    • When adding the blood to the pot, you should gently stir the pot once with chopsticks to avoid the blood sticking to the bottom of the pot and burning.
    • Do not cook the blood for too long as it will become dry and lose its delicious flavor.
    • You can cut the blood piece in half to check if there is still red blood; if not, then the blood is cooked.
