    First, soak 100g of pork belly in diluted salt water for about 15 minutes. Then take it out, rinse with water, and let it drain.

    Next, use a knife to cut the meat into small pieces and put it into the meat grinder, cover it, and grind for about 1 minute on high until the meat is finely ground.

    Then, soak 100g of dried shrimp in cold water for about 20 minutes, then take it out and rinse clean. For 4 tomatoes, wash them, remove the stem, and cut them into wedges.

    Peel and mince 3 shallots. Slice 100g of Vietnamese pork sausage. Next, peel 3 cloves of garlic and mince them, and cut the tofu into small bite-sized pieces.

    For the fresh vegetables served with the dish, such as cabbage, cut it into small pieces. Wash the herbs and bean sprouts thoroughly, and let them drain.

    First, put all the minced pork belly, 50g of dried shrimp, and half of the prepared shallots into a clean bowl.

    Next, add minced garlic and 1 free-range egg into the bowl. Season with 2 teaspoons of fish sauce, 1 teaspoon of sugar, and 1 teaspoon of pepper into the mixture.

    Mix all the ingredients and seasonings together until well combined. Then, take small pieces and roll them into round balls, continuing until the filling is used up.

    Finally, place the made filling into a steaming pot and steam for about 10 minutes over medium heat until the filling is soft and cooked.

  • Cook the tomato sauce

    Heat a pan on the stove, add 4 tablespoons of cooking oil to the pan. When the oil is hot, add the remaining half of the shallots and sauté over medium heat for about 30 seconds.

    When the shallots are golden and fragrant, add 4 prepared tomatoes, 1 tablespoon of chili powder, and 50g of dried shrimp and stir-fry over medium heat for about 7 minutes until the sauce turns red like tomatoes and is fragrant.

  • Cook the broth

    Place a pot on the stove, add 50g of pig skin, 100g of pork ribs, 1/2 onion, and 3 chili peppers into the pot.

    Next, add 1 liter of water into the pot, turn on the heat, and cook the broth over medium heat for about 30 minutes. After the water boils, reduce the heat, add the steamed filling into the pot, and continue to cook for another 10 minutes.

    Then, add the previously cooked tomato sauce and 100g of cut tofu into the pot, and season with 1 tablespoon of shrimp paste, 1 tablespoon of fish sauce, 1 tablespoon of salt, 1 tablespoon of sugar, and 1 tablespoon of seasoning powder into the broth.

    Stir well to let the broth absorb the flavors and continue to boil for another 10 – 15 minutes, adjust the seasoning to taste, and turn off the heat.

  • Make the dipping sauce

    To make the authentic dipping sauce, you take the chili peppers from the broth pot and mash them to get a bowl of mashed chili. Add another tablespoon of shrimp paste and a bit of lime juice to complete it.
