How to choose fresh and safe duck meat
- To buy fresh duck meat, choose those with a light yellow skin, thin, smooth to the touch and with high elasticity.
- Carefully observe to select ducks that are still fresh, with skin that has no bruises or pooled blood, and do not detect any foul smell when sniffed; gently press the thigh of the duck and you will feel firm meat.
- You should not choose ducks with dark, dull skin as this indicates that the duck died before being processed. Also, do not select ducks that are swollen with water, have soft meat, or are slightly deformed as these ducks have been injected with drugs, compromising quality.
How to choose delicious and fragrant sour bamboo shoots,
- When buying bamboo shoots, pay attention to choose those with a light yellow color, with veins, a thin outer layer, not wilted, and the surface should not have black spots.
- Choose bamboo shoots that are rough in shape, with uniform segments, straight, not bent, tender, looking juicy and crispy. When smelling, you will notice a distinctive aroma.

Prepare the ingredients
After buying the duck, use salt and white vinegar to rub all over the inside and outside of the duck, rinse it with clean water, and let it drain.
With 500g of sour bamboo shoots, tear them into small pieces about the size of a finger. Put the bamboo shoots in a pot, add 1 liter of clean water, turn on medium heat, and boil for about 30 minutes.
After 30 minutes, drain the bamboo shoots in a colander, discard the water used to boil the bamboo shoots, rinse the boiled bamboo shoots with clean water, then remove and let them drain.
How to clean duck meat without odor- Use salt to rub all over the duck, rinse with clean water. Then, crush ginger, mix it with white vinegar, and rub it all over the duck once more. Finally, rinse the duck with clean water and let it drain.
- Alternatively, you can mix salt and lemon and rub the entire duck. Finally, rinse really well with clean water several times and let it drain.

Cooking the broth
Add 2 liters of filtered water, 2 crushed ginger roots, 2 shallots, and 2 tablespoons of seasoning into the rice cooker.
Next, add half of the duck, cover the lid, switch to Soup/Stew mode, and set the time for 1 hour. After that, open the rice cooker lid, skim off the fat that rises to the top, and cover the lid again.
Place a pot on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add 500g of bamboo shoots and stir-fry over medium heat. Season with 3 tablespoons of seasoning and 2 tablespoons of fish sauce for the bamboo shoots to absorb the flavors first. Stir continuously for 5 – 10 minutes, then turn off the heat.
After that, open the rice cooker, remove the duck meat to a plate, let it cool, then add the stir-fried bamboo shoots to the pot. Switch to the white rice cooking mode for about 15 minutes.
Wait for the duck meat to cool down a bit, then separate the meat from the bones, and continue to cut the meat into bite-sized pieces. For the thighs, chop them into pieces and set aside.
