Ingredients for Tomato Bone Noodles Serves 3 people

Pork bones 800 gr Noodles 1 kg Tomatoes 8 fruits Fresh chili 4 fruits Green onions A little Shallots 4 bulbs Vegetables A little (fresh vegetables to serve with as desired) Garlic 1 bulb Annatto oil 30 ml (about 2 tablespoons) Common seasonings A little (Salt – Sugar – Ground pepper – Seasoning powder – Monosodium glutamate) Fish sauce 1 tablespoon

  • First, you should choose to buy bone parts like marrow bones, ribs, or pork tail bones, which will make the broth sweeter and tastier than other bone parts.
  • Additionally, you need to pay attention to see that fresh pork bones will often have bright red blood clinging to them, and they feel heavy in the hand because they are fresh bones, just slaughtered.
  • Avoid buying frozen bones of unclear origin to protect your health and that of your loved ones.
  • Do not buy pork bones that are bright white or pale in color, which feel light in hand because they are often old bones that do not make a good broth and can easily smell bad.

How to choose fresh tomatoes

  • Fresh, clean tomatoes are those that are red, round, and look juicy, while the outer skin is thin and shiny.
  • Moreover, freshly harvested tomatoes, which taste fresh, are those with bright green stems that are tightly attached to the body and not separated.
  • Additionally, you should avoid buying overly ripe, bruised, unevenly colored tomatoes that feel soft and mushy to the touch, as this indicates that the tomatoes have been stored for too long.

How to prepare Tomato Bone Noodle

  • Prepare the ingredients

    First, wash the green onions, shallots, and garlic thoroughly. Then, cut off the roots of the green onions and chop the green part into small pieces. Peel the shallots and garlic, then mince them and put them in a bowl.

    Wash the chili peppers and let them dry.

    Wash the tomatoes and then cut them into wedges. If you do not want the broth to be too sour, you can remove some of the tomato seeds.

  • Prepare and marinate the pork bones

    Wash the pork bones with water and let them drain. If you want the bones to be cleaner, you can blanch them in boiling water to remove any blood residue and dirt sticking to the bones.

    Next, place the pork bones in a large bowl, add 3 spoons of seasoning powder and 1 spoon of ground pepper, then mix well to let the meat absorb the spices. Marinate the bones for 30 minutes to enhance the flavor.

  • Pork Bone Stew

    Put the pork bones into an pressure cooker and then add about 1.5 liters of water so that the water covers the bones. Close the lid and stew the bones for about 20 minutes until the pork bones are soft and release their sweet juices.

    If you don’t have a pressure cooker, you can stew the bones in a regular pot over medium heat for about 40 – 50 minutes until the pork bones are soft and delicious.

  • Sauté Tomatoes

    While stewing the bones, place a pan on the stove. Add 1 tablespoon of cooking oil to the pan. When the oil is hot, add the chopped shallots and minced garlic, stirring until fragrant and golden.

    When the shallots and garlic are fragrant and golden, add the sliced tomatoes and sauté evenly over medium heat. Add another 30ml of annatto oil to give the broth a beautiful color. Continue to sauté the tomatoes for about 5 minutes over medium heat until they are soft and cooked.

  • Cook the broth

    After about 20 minutes of simmering the bones, you pour the bones and broth into a new pot, skim off the foam, and add water to fill the pot.

    Continue to simmer the bone broth for another 5 – 7 minutes. When the water in the pot starts to boil, add the sautéed tomatoes into the pot, stir well, and cook over medium heat until it boils again.

    When the water begins to simmer again, you proceed to season with 2 tablespoons of seasoning powder, 1 tablespoon of fish sauce, and 1 teaspoon of salt. You can adjust the amount of spices to suit your family’s taste.

    Finally, you turn off the heat and add the chopped green onions. Place the noodles in a bowl, ladle the hot broth over them, and enjoy immediately.
