- You should choose straw mushrooms that are still in bud, not opened, fresh, with a slightly round or cylindrical shape, and uniform size, as this ensures that the mushrooms will have an even sweetness and look more appealing in the dish.

How to prepare vegetarian noodles

Prepare the ingredients
Peel the white radish, wash it clean, and cut it into small, bite-sized pieces. Wash the green onions, cilantro, and celery, then chop them finely.
Fry the tofu on high heat with 80ml of cooking oil for about 2 minutes until it is golden on both sides, then cut it into small bite-sized pieces. Next, add the vegetarian cinnamon sausage and fry for another 5 minutes before cutting it into thin slices. Peel and mince the shallots and garlic.
To remove the unpleasant smell of straw mushrooms, soak them in diluted salt water for about 5 minutes after cutting off the stems, then rinse with clean water and let them drain.
Fry the bean curd skin with 50ml of cooking oil over high heat for about 2 minutes until it is evenly golden, then remove it, use paper towels to absorb all the oil, and cut it into small pieces about the length of a finger.
Tip: To prevent oil splatter when frying tofu, you should use a towel to absorb any moisture on the surface of the tofu before adding it to the oil and frying. -
Simmer the radish
Add 1 tablespoon of vegetarian seasoning with the white radish and 3 liters of water, cook on high heat for about 1 minute until the water in the pot boils, then reduce the heat to low and simmer for about 20 minutes until the white radish is soft and releases all its sweetness.

Cook the broth
Add 10ml of cooking oil with chopped onion and garlic, stir-fry until the onion and garlic are fragrant, then add the radish broth and straw mushrooms along with 2 tablespoons of sugar, 1 tablespoon of salt, 1 teaspoon of pepper, 1 teaspoon of monosodium glutamate, 1 tablespoon of vegetarian seasoning into the pot.
Simmer on low heat for about 8 more minutes until the straw mushrooms are cooked, then add tofu, dried tofu skin, and vegetarian sausage. Continue cooking for about 1 minute until the broth boils again, adjust the seasoning to taste, add chopped green onions, cilantro, and celery, mix well, then turn off the heat.

Blanch the noodles
Put a pot of water on the stove and add 1 teaspoon of salt and 10ml of cooking oil. Wait until the water in the pot boils, then add the noodles and cook for 7 – 9 minutes until the noodles are soft. Turn off the heat, take the noodles out, rinse with clean water, and drain.
