What is tapioca flour? How to distinguish tapioca flour from wheat flour
- Tapioca flour is a type of flour made primarily from cassava starch, often used to thicken soups, desserts, or make chewy cakes like tapioca cakes, pork skin cake, etc. Tapioca flour, when cooked or steamed, will turn translucent.
- Unlike wheat flour, tapioca flour is coarse, dry, pure white, and less fine, while wheat flour is darker and smoother.
- Additionally, tapioca flour when cooked tends to create a thick, chewy, and easily adhesive texture, while wheat flour does not stick but has the ability to expand and is fluffy.

Kneading Tapioca Flour
Add 300g of tapioca flour into a bowl and gradually pour in a moderate amount of hot water, kneading continuously for about 5 – 10 minutes until the dough forms a sticky, smooth ball.
Note:- Make sure to use hot water for kneading the tapioca flour; using cold water or water that is not hot enough will prevent the flour from binding together.
- Depending on the type of tapioca flour, the water absorption may vary, so you should add water gradually while kneading until a smooth, elastic dough is formed.

Dividing the Dough and Shaping
Sprinkle about 30g of dry tapioca flour onto a cutting board, then divide the dough into 2 parts; roll one part into a thin sheet and cut into bite-sized strips, and shape the remaining part into small balls.
To prevent the pudding from sticking together after cooking, sprinkle the remaining 20g of dry tapioca flour to coat the dough evenly!

Cook tapioca with ginger and sugar
Place a pot on the induction stove with 500ml of water, boil over medium heat until the water boils, then add the tapioca and stir well.
When the water boils again, continue cooking for about 10 minutes until the tapioca is clear and soft, then add 150g of sugar and stir until the sugar is completely dissolved.
Next, cook for another 5 minutes and adjust the sweetness to your liking. Finally, turn off the heat, add the finely chopped ginger, and stir once more to finish.
