  • Choose fresh, plump, long, straight cassava roots that feel heavy in hand, with a shiny skin indicating soft, sweet, and less fibrous roots.
  • Try lightly scraping the thin outer skin with your fingernail; if the inner skin is light pink, it’s a good choice. Roots with light pink skin will have fewer toxins than those with white skin.
  • Do not leave cassava for too long as it will dry out, become hard, and lose its taste.
  • Avoid buying overly large roots, soft stems, hardened roots, dry and shriveled skins, or those with strange odors.

How to make Mochi Cassava Dessert

  • Mixing Mochi Cassava Dough

    Peel the cassava (manioc) you bought, wash it clean with water 2 – 3 times, drain it, then cut it into short pieces that are easy to eat and place them in a steamer, steaming for about 20 – 25 minutes.

    Once the cassava is cooked, put it in a bowl and mash it immediately while it is still hot, then mix well with 30g of tapioca flour, 90ml of coconut milk, and 3 teaspoons of chia seeds.

    If you feel the dough is dry, you can add 10ml of coconut milk!

  • Shaping the Cassava Dessert

    When you see the dough is smooth and pliable, take a piece of dough about 1/2 teaspoon in size in your hand, shape the dough into round balls that are easy to eat, each ball about 10g of dough.

    Put 700ml of filtered water into a pot with 70gr of palm sugar and sliced ginger, then place it on the stove over high heat.

    When the water starts to simmer, add the freshly formed dough balls, reduce the heat to medium, and stir well to prevent the dough from sticking to the bottom of the pot.

    In a bowl, mix 25gr of cassava starch with 30ml of filtered water, stir well, and then slowly add it to the pot. When you see the mixture boil again, stir well, taste and adjust the seasoning as needed, then turn off the heat and it’s done.
