Ingredients for Red Bean Mochi Dessert For 4 people

Red beans 250 gr Glutinous rice flour 50 gr Unsweetened fresh milk 50 ml Rock sugar 1/3 cup (rice bowl) White sugar 2 teaspoons Water 1.9 liters

How to choose good, plump red beans

  • You should pay attention to choose the right small, round red beans instead of large red beans.
  • Choose beans that are bright red, not infested with pests, and show no signs of mold or unpleasant odors.
  • Choose beans that are plump, and if you press the red bean with your fingernail, it should still be hard and not crumble, indicating fresh beans.
  • Avoid choosing beans that are too large, as these are often not tasty, contain fewer nutrients than smaller beans, and especially tend to have a slight astringent taste when eaten.

How to make Red Bean Mochi

  • Rinse and cook the red beans until soft

    Rinse the red beans, then place them in the electric pressure cooker with 1.9 liters of water. Next, close the lid tightly and cook the beans for 30 minutes in the “Bean Cooking” mode.

    Tip: If you don’t have a pressure cooker, you can soak the red beans for about 4 – 6 hours and then use a regular pot to cook them!

  • Cook the red bean dessert

    After 30 minutes, add 1/3 cup (rice bowl) of rock sugar to the pot and continue cooking for another 30 minutes until the beans are soft.

  • Mixing the mochi dough

    Put 50g of glutinous rice flour and 2 teaspoons of sugar into a bowl and mix well.Next, gradually add 50ml of unsweetened fresh milk into the flour and continue mixing until the dough becomes sticky.

    Then, use your hands to knead the dough until it forms a smooth, pliable ball that doesn’t stick to your hands.

    Tip: Depending on the type of glutinous flour you use, the water absorption may vary. Therefore, if the dough is dry and crumbly, you can add a little more unsweetened fresh milk!

  • Boiling the mochi and completing the dish

    Divide the dough into several equal pieces of bite-sized portions, then roll them into balls and use your finger to press in the center to create a dent.

    Boil a pot of water, add the dough and cook for about 1 minute over medium heat until the dough floats to the surface of the water, indicating it’s done. Next, transfer the mochi to a bowl of ice water to cool.

    Finally, scoop the red bean dessert into a bowl, add the mochi on top, and it’s ready to enjoy.
