How to choose fresh and delicious cassava
- When buying cassava, observe and choose those that are plump, long, straight, brightly colored, and feel heavy in hand.
- Lightly scrape the outer skin and select those with a light pink inner skin.
- Do not choose those that are too thin, misshapen, or have an excessively white inner skin, as a white inner skin indicates the presence of toxins.
- You should not buy those with overly soft flesh or those that are hard and dry, as these are stale cassavas and no longer fresh.
How to Make Cassava Dessert

Prepare Cassava and Ginger
After purchasing cassava (manioc), wash off the dirt, peel or cut off the skin, wash it again with water, then cut it into small square pieces about the size of a finger.
Peel the ginger, slice it, crush it, and then finely chop it.

Boil Cassava
Prepare a basin of water, add 1 tablespoon of salt, dissolve the salt, then soak the cubed cassava in it for about 3 – 4 hours.
After soaking, remove the cassava and rinse it with clean water.
Place a pot on the stove, add 1 liter of water and bring it to a boil over high heat; once boiling, add the cassava and boil over medium heat for about 10 minutes. After 10 minutes, turn off the heat and remove the cassava to drain.

Cook the dessert
Place a pot on the stove, add 1 liter of filtered water, 3 tablespoons of brown sugar, and the minced ginger, then bring to a boil over high heat.
Put 3 tablespoons of tapioca flour in a bowl, add 1/2 cup of filtered water, and stir the mixture until dissolved.
When the sugar water is boiling, you can adjust the sweetness to your taste, then add the boiled cassava, add the tapioca mixture, and stir until the dessert boils again over medium heat for about 10 minutes, then turn off the heat.
When serving, scoop the dessert into a bowl and add a little coconut milk on top!
Tip: To prevent the dessert from clumping, add the tapioca mixture gradually and stir continuously with a ladle. -
