Cook the red beans
After soaking, put the beans in a pot and cover with water about 1 finger joint deep, cook until the beans are soft.
Next, put the beans into a blender or use a handheld mixer to blend until the beans are smooth.
Tip: Cook until the beans are soft, do not let the water evaporate to avoid burning the beans.

Make the red bean filling
Add 200g of granulated sugar and a little salt, continue to use the blender to blend the bean and sugar mixture smoothly.
Put the mixture into a pot, place it on the stove, cook on low heat and stir until the beans thicken.
Transfer the beans to a bowl to cool, then divide the beans into equal portions.
Tip: While cooking the beans, continuously stir to prevent burning.

Make the dough for the floating cake
Put 500g of glutinous rice flour into a bowl, use your hands to knead the flour, then gradually add water while kneading the dough until it becomes smooth.
Tip: It is best to knead the glutinous rice flour with warm water at 50 – 70 degrees, as water that is too hot will cause the dough to stick to your hands, making it difficult to shape the cake. Kneading the dough with cold water can cause the dough to clump together and not dissolve completely.

Wrap the floating cake ball
Use your hands to flatten the dough and place the red bean filling inside, then proceed to wrap the cake.
Tip:
- To have a delicious floating cake, the dough must be thin, not too thick, and the cake must be round.
- The filling must be wrapped securely, not sticking out to avoid the cake breaking during cooking.

Cooking Floating Rice Cake
Boil a pot of water to cook the cake; when the water is boiling, add the cake and cook until it floats, then continue boiling for about 1 – 2 minutes before removing the cake and placing it directly into cold water.
Boil 400g of palm sugar with 300ml of water and a little salt to balance the sweetness of the sugar until it dissolves. Then add a little sliced or minced ginger and cook for another 1 – 2 minutes before turning off the heat.
