How to make Cheese Fondue

Grate the cheese
Use a grater to grate Emmental cheese and Gruyere cheese into small shreds.
Combine the two grated cheeses in a bowl with 2 tablespoons of cornstarch and mix the mixture well.

Cook wine
Use a clove of garlic cut in half to rub the inside of the pot to create a characteristic aroma for the dish, then place it on the stove over medium heat. When the pot is hot, add 250ml of dry white wine and bring to a boil.

Cook cheese
When the wine is boiling, divide the pre-mixed cheese into small portions and gradually add each portion into the pot, stirring until the cheese is smooth and melted. Continuously use a ladle to stir evenly to prevent the cheese from clumping.
Note: You should add just enough cheese into the pot to melt before adding more. Avoid adding all at once, as this can make the cheese hard to melt, clump, or even burn if it is too thick.
When all the cheese has melted, add 1/4 teaspoon of salt, 1/4 teaspoon of nutmeg, and stir to combine the mixture.
