    For the gizzard, heart, and liver, scrape off the inner membrane of the gizzard and also rub everything with salt for about 3 – 5 minutes, then rinse thoroughly.

    First, you pluck 4 green pepper branches to take the seeds.

    Next, you place a pan on the stove and heat it up, add the freshly plucked green pepper seeds along with 1 tablespoon of black peppercorns, and roast for about 5 minutes until the peppers become fragrant. Transfer the pepper to a mortar and crush it.

    Add coconut water from 2 coconuts to the chicken pan, bring to a boil. Lower the heat to medium and simmer for about 10 minutes.

  • Prepare and Marinate the Chicken

    First, wash the chicken meat in a bowl of water mixed with 2 tablespoons of vinegar for about 3 – 5 minutes, then rinse several times with clean water, drain, and use a knife to cut into bite-sized pieces.

    Next, place all the cut chicken pieces into a bowl, then marinate with 1 teaspoon of seasoning and 1 teaspoon of ground pepper, using a chopsticks to mix well, and let the chicken absorb the spices for 15 minutes.

    • To keep the hotpot broth clear, cook on low heat and continuously skim off the foam.
    • You can use plain water instead of fresh coconut water; however, using fresh coconut water will enhance the flavor of the hotpot.
