How to make Black Chicken Soup with Salted Lemon

Prepare the ingredients
For the cleaned black chicken, when you buy it, wash it thoroughly and cut the black chicken into bite-sized pieces.
Wash the white radish, peel it, and cut it into pieces.
Wash the green onions, and cut them into pieces. Wash the shallots, peel them, and slice them thinly.
Wash the coriander, and chop it finely. Remove the water from the salted lemon and crush it.

Blanch the ingredients
Before cooking, prepare boiling water to briefly blanch the white radish until just cooked, then remove and drain.
To eliminate dirt, blood, and impurities from the black chicken, blanch the chicken for 1 – 2 minutes, then remove and rinse with water and drain.

Cook the soup
Heat a pan on the stove, when the pan is hot, add 1.5 tablespoons of cooking oil, then add minced shallots and green onion roots to sauté until golden.
After that, add salted lemon and stir for 1 minute. Next, add the black chicken and white radish, stir-fry over high heat.
At this point, add 2 liters of water to the pan, stir well and wait for the water to boil.
When the soup water boils, skim off the foam, reduce the heat, season with 3 teaspoons of sugar, 2 teaspoons of seasoning powder, 1 tablespoon of fish sauce, 1/2 teaspoon of monosodium glutamate, and simmer for another 1 – 2 minutes before turning off the heat.
