How to choose fresh and delicious chicken
- You should choose chicken with a compact, firm body, and a nice breast because that indicates young chicken which will be tender and delicious when cooked.
- Fresh chicken will have a rosy, bright color. Gently touching the piece of meat will give a high elasticity feel.
- Good chicken has thin, smooth skin, a light yellow color; some areas like the breast, wings, and back will have a darker yellow color.
- You should not choose chicken that is white or has dark spots; all-over yellow skin or chicken with bruises or blood clots on the skin.
- Fresh and delicious chicken will have a characteristic aroma. You should not choose chicken that smells foul or has a strange odor.
- When buying, you should press your finger on the part of the meat suspected to be water-injected (thighs, breasts, etc.). If the meat feels mushy, soft, or lacks elasticity, do not buy it.

Marinate for 30 minutes to absorb the spices.
