  • You should choose mature lotus seeds that are firm, with a glossy skin, and are either off-white or deep yellow. Because when cooked, these seeds will be soft, rich, and have a very distinctive aroma.
  • Be careful not to choose young seeds, those that are too small, seeds that have lost their centers, dry seeds, or moldy seeds. Because these seeds will turn bland and lose their delicious taste when processed.

  • Rambutan, also known as yellow-fleshed rambutan, has a sweet and sour taste and a fragrant aroma similar to regular rambutan.
  • Rambutan has a red-pink outer skin instead of the bright red, slightly darker skin of regular rambutan. You should choose round fruits that are still in a cluster, with green, young spines.
  • If you smell a distinctive aroma, then the rambutan is ripe. Avoid buying fruits that show signs of insect bites, immature fruits, or those that have fallen from the branch.
