Coconut water 200 gr Mung beans 100 gr Black-eyed peas 100 gr Dalat white beans 100 gr (green beans) Lotus seeds 100 gr Tapioca flour 4 teaspoons Agar-agar 20 gr Pandan leaves 50 gr (1 bunch) Coconut milk powder 50 gr (1 packet) Rock sugar 100 gr Salt 1/2 teaspoon

  • Usually, young coconuts have thin, soft meat, while mature coconuts are crunchy and harder, and are not as sweet as young coconuts.

  • The most common place to buy sweet potato flour and various types of beans is at supermarkets, as they have clear origins and it’s easy to control the product’s expiration date.

  • Currently, various e-commerce platforms are also bustling with sales due to their great convenience. Just find a reputable brand and place an order, and it will be delivered right to your door.
  • Nowadays, there is a type of canned coconut milk that is very convenient as it saves a lot of time compared to powder form. Additionally, you can make coconut milk yourself in the most common way by squeezing the milk from grated coconut, which is not too difficult.

  • Prepare coconut water and pandan leaves

    Strongly hit the whole bunch of coconut water on the ground to separate it into individual fruits.

    Next, use a knife to cut each fruit in half, then use a spoon to scrape out the flesh inside. After that, clean the coconut water and let it drain.

    Cut the base of the pandan leaves, wash them clean, and then tie them neatly together.

    Tip: To save time, you can buy pre-cut coconut water flesh; when you get home, you just need to wash it again.

  • Boil the mixed beans

    Soak the sweet potato flour in water for 15 – 45 minutes. The seaweed should also be soaked in water for 10 – 15 minutes until it expands.

    Soak the white beans from Da Lat, black-eyed peas, mung beans, and lotus seeds in water for at least 4 hours or overnight to allow the beans to swell. Be sure to drain the water.

    Place a pot on the stove and add the white beans from Da Lat, black-eyed peas, mung beans, and lotus seeds to boil for 20 – 30 minutes over high heat. When the beans are soft, remove them.

  • Make coconut milk

    Take a bowl and mix 50g of coconut milk powder with 250ml of water until well combined.

    Next, place a pot on the stove and cook for 10 minutes on low heat until the coconut milk mixture is thick and smooth, then turn off the heat and pour it into the bowl.

  • Cook the dessert

    Place a pot on the stove with 300ml of water, 100g of rock sugar, 50g of pandan leaves, and 200g of coconut water, cooking on medium heat for 10 minutes.

    Then add the potato starch, various beans, and 1/2 teaspoon of salt, and cook for another 10 minutes.

    After the dessert boils, remove the pandan leaves and add the agar and all the coconut milk, cooking for another 7 – 10 minutes, seasoning to taste before turning off the heat.

    Tip:
    • If the potato starch has soaked long enough and is soft, you can add it last along with the agar.
    • To make the dessert taste better, skim off any foam that forms while cooking.
