How to prepare Coconut Water Chè

Prepare coconut water and pandan leaves

Soak the white beans from Da Lat, black-eyed peas, mung beans, and lotus seeds in water for at least 4 hours or overnight to allow the beans to swell. Be sure to drain the water.
Place a pot on the stove and add the white beans from Da Lat, black-eyed peas, mung beans, and lotus seeds to boil for 20 – 30 minutes over high heat. When the beans are soft, remove them.
Tip: To save time, you can soak the beans for 10 – 20 minutes before boiling to soften them. -
Make coconut milk
Take a bowl and mix 50g of coconut milk powder with 250ml of water until well combined.
Next, place a pot on the stove and cook for 10 minutes on low heat until the coconut milk mixture is thick and smooth, then turn off the heat and pour it into the bowl.

Cook the dessert
Place a pot on the stove with 300ml of water, 100g of rock sugar, 50g of pandan leaves, and 200g of coconut water, cooking on medium heat for 10 minutes.
Then add the potato starch, various beans, and 1/2 teaspoon of salt, and cook for another 10 minutes.
After the dessert boils, remove the pandan leaves and add the agar and all the coconut milk, cooking for another 7 – 10 minutes, seasoning to taste before turning off the heat.
Tip:- If the potato starch has soaked long enough and is soft, you can add it last along with the agar.
- To make the dessert taste better, skim off any foam that forms while cooking.
