How to make Sticky Black Rice Pudding with Yogurt and Tapioca Pearls

Rinse and cook the black sticky rice
Put 500g of black sticky rice into a basin and rinse thoroughly with cold water 2 – 3 times. Place the rinsed black sticky rice into the basin, add warm water to just cover the rice, and soak for at least 2 hours.
After 2 hours of soaking, the black sticky rice grains will have softened; drain the soaking water, rinse again, and drain completely, then place the rice into a rice cooker. Add fresh water to the pot equal to the amount of rice along with 1/2 teaspoon of salt, place the pot into the rice cooker, and press the “Cook” button to cook for about 20 – 30 minutes.
In a large bowl, add 150ml of warm water, 150g of sugar, and 50g of coconut cream powder, and stir well until the sugar is completely dissolved.
Next, open the rice cooker’s lid; if the black sticky rice has expanded and cooked through, pour the coconut milk mixture you just prepared into the pot, and stir well. Close the lid and switch to “Cook” mode, cooking for another 5 minutes.

Mixing and kneading the tapioca dough
Put 200g of tapioca flour, 30g of powdered sugar, and 10g of green tea powder into a large bowl and mix well. Add 100ml of hot water to the bowl, mixing thoroughly so that the water absorbs completely into the flour.
When the dough is dry, use your hands to knead it until it becomes smooth, elastic, evenly colored, and no longer sticky.
-
Shaping and boiling the tapioca pearls
After the dough is well mixed, place it on a cutting board, divide it into small pieces, and roll the dough into long strips, then cut it into small, even balls.
Place each dough ball in the palm of your hand and roll it into a round shape, continuing until all the dough is used up.
Bring a pot of water to a boil over high heat, then add the formed tapioca pearls. Boil the pearls until the water returns to a vigorous boil, and the pearls float to the surface and become translucent; then remove them and soak them in a bowl of cold water.
-
Completion
You take a glass, add some tapioca pearls, a few pieces of grass jelly, a couple of soaked lychee fruits, and then scoop the purple sticky rice on top.
Finally, you just need to pour the cold yogurt into the glass and sprinkle a little dried coconut on top, and the dessert is ready to enjoy!

How to Choose Fresh Ingredients
How to choose good Thai jackfruit
- The flesh of ripe jackfruit usually has a shiny yellow color, thick flesh, sweet and rich taste, with light yellow or chicken egg-colored fibers.
- You should also observe the part of the jackfruit where the seller is separating the pieces; naturally ripened jackfruit has little sap and no white sap when cut.
- Press-ripened jackfruit also has a yellow color but feels fibrous when eaten, with dark yellow fibers similar to the flesh of the jackfruit.
- When buying, smell the pieces; if they lack the characteristic sweet scent, they are press-ripened jackfruit, bland, and dry.
- Jackfruit injected with chemicals has white sap flowing from inside the jackfruit due to the chemical’s effect; if you see this phenomenon in the jackfruit the seller is cutting, avoid buying it.
How to choose good ripe mango
- Natural ripe mango often has a characteristic fragrant smell, sometimes with tiny black spots on the skin, but not large patches.
- Choose ripe yellow fruits that feel firm, with shiny and smooth skin, and the base of the mango stem slightly indented.
- When gently pressing on the mango, you will feel the firmness of the mango flesh; if it is not soft or bruised, it is a good ripe mango.
- Avoid selecting mangoes that are bruised, blackened, or have overly smooth, shiny, and flawless skin.
