How to choose fresh short ribs
- You should not choose ribs that are too small. Small ribs are often from small pigs, so the meat will not be of good quality due to being harvested early.
- For this dish, you should choose ribs with a bit of fat to make the broth have an attractive fragrant and rich flavor.
- Additionally, you should choose ribs that are bright red, not too pale and not too dark. Especially, the ribs should not have a foul smell or be leaking fluid.
How to choose delicious shiitake mushrooms
You can use fresh shiitake mushrooms or dried shiitake mushrooms!
For dried shiitake mushrooms
You should choose the firm ones, not broken, bright in color, and without white mold spots. You should buy from reputable establishments to ensure safety.
For fresh shiitake mushrooms
- You should buy those with bright colors, characteristic aroma, moderate caps, tightly closed, and slightly brownish yellow color.
- Choose mushrooms with firm stems, uniform color; if the mushrooms have opened, the gills should be evenly spaced, beautiful and dry.
- Avoid choosing damaged mushrooms, those with a rancid smell, or slimy texture. If you see mushrooms that are dark brown, it is better not to buy them, as they may be toxic.

Prepare the Pork Ribs
First, wash 500g of pork ribs thoroughly, then put them into a pot of boiling water with 1 tablespoon of salt to blanch, then remove the ribs and rinse clean.
Another useful tip is that you can add a little white wine to the blanching water. The wine is very effective at eliminating odors.
Add 1 liter of boiling water to the pot, put the blanched pork ribs in, add 1 tablespoon of seasoning powder and simmer for 20 minutes for the ribs to absorb the flavor and make the broth sweeter.

Prepare other ingredients
500g of shredded water morning glory, cleaned and then cut into pieces, put into a bowl, add 2 teaspoons of salt and mix well, then let it soak for about 15 minutes to let the morning glory drain water.
Continue to rinse the morning glory thoroughly to remove the salt, then squeeze out the excess water.
Dry shiitake mushrooms are soaked in warm water for about 30 minutes, then removed, rinsed, and squeezed under running water several times to remove sand, cut off the mushroom stems, and then chop finely.
Wood ear mushrooms are soaked in water for about 1 – 2 hours until they are soft, then chopped finely.
Tomatoes and onions are cut into wedges.
Note: To prevent the morning glory from causing itchiness when eaten, after preparing the morning glory, squeeze it with coarse salt and then rinse well.
Tips for properly soaking dried wood ear mushrooms
- Before soaking wood ear mushrooms, you should rinse them with cold water to remove sand and dirt.
- Only soak wood ear mushrooms for a maximum of 3 – 4 hours, in cold water, not hot water as it may cause the mushrooms to produce toxins harmful to health.
Tips for quickly softening dried shiitake mushrooms and removing sand
- Soak shiitake mushrooms in water for at least 8 hours or overnight for even swelling.
- After soaking, rinse the mushrooms under running water several times to completely remove sand and dirt.
- Cut off the mushroom stems as they are quite tough and not pleasant to eat.
- When soaking, add a little salt to help easily remove dust and dirt, while keeping the base of the mushroom in contact with the water surface.

Make meatballs
Prepare a large bowl, add 200g of ground pork, 200g of raw sausage, then add 20g of straw mushrooms, 20g of shiitake mushrooms, season with 1/2 tablespoon of minced shallots, 2 tablespoons of fish sauce, 1/2 tablespoon of seasoning, 1 tablespoon of sugar, and 1/2 teaspoon of pepper, then mix everything well, and roll into bite-sized balls.

Add ingredients to the broth
Add 1 tablespoon of cooking oil to the pan, add 1 tablespoon of minced shallots and sauté until fragrant, then add 200g of tomatoes and stir-fry until they change color.
Add all the rolled meatballs into the pot of simmering pork ribs, cook for another 10 minutes to let the meatballs cook through, then add the sautéed tomatoes, season with 1 teaspoon of sweet powder, 1/2 teaspoon of salt, and 1.5 tablespoons of fish sauce, and then turn off the heat.

Put the noodles into a bowl, then alternately add the pork ribs, tomatoes, mushrooms, shredded jute, cilantro, and finely sliced onions, and finally pour the boiling broth over it to complete.
