How to make Vegetarian Lotus Root Hotpot

Prepare the ingredients
First, peel the lotus root and soak it in a bowl of diluted salt water, then rinse it thoroughly with water and drain. Next, cut the lotus root into bite-sized pieces.
For the mushrooms, cut off the muddy stems and wash them clean with water.
Wash the remaining ingredients with water as well. Cut the tomatoes into wedges; for the other ingredients, cut them into pieces, and for the galangal, peel it clean and slice it thinly.
