Fresh noodles 500 gr Snakehead fish 250 gr Black tiger shrimp 300 gr Fermented fish sauce 100 gr Fresh coconut water 200 ml Banana flower 1 piece Bean sprouts 100 gr Chinese chives 100 gr Thai basil 50 gr Lemongrass 3 stalks Chili 10 gr Lime 1 fruit Filtered water 800 ml
Tips for choosing good snakehead fish
- Choose fish with dark black scales and a sharp, firm head.
- When buying snakehead fish, choose those weighing between 0.5 – 1kg for more meat and firmness.
- The larger the fish, the tastier the noodles will be. Smaller fish have more bones and their meat is not as fragrant and chewy as larger fish.

Preparing Snakehead Fish
Clean the snakehead fish, let it drain, then cut into fillets.
Using a small, sharp knife, make a straight cut down the back from the head to the tail, close to the fish’s backbone. Do the same on the other side, being careful to gently cut along the bones without separating the flesh from the fish.
Detach the backbone from the tail, using scissors to cut the backbone away from the flesh from the tail to the head.
For the small bones you initially cut away from the backbone, use a small sharp knife to carefully remove them from the fish flesh.
Carefully use your hands to feel for any remaining bones in the fish to ensure there are none left. Now you can prepare the fish without worrying about your children choking on fish bones.
Tips for Preparing Snakehead Fish:
- Rinse the fish briefly to remove the slime, then place it in a basin and add salt, squeezing 1 or 2 lemons depending on the amount of fish.
- Wash the fish thoroughly with water, scale it, gut it to clean the internal organs, and remember to clean the milky white membrane inside the belly.
- The snakehead fish has a white vein along its sides that creates a fishy smell. When preparing the fish, remember to cut close to the gills to expose that vein. Removing that vein will help reduce the fishy smell during cooking.
- Be careful not to break the gallbladder while preparing the fish, as it will cause bitterness.
- You should wash the fish several times with lemon or vinegar to remove the slime and eliminate the fishy smell.

Prepare other ingredients
Shrimp peeled, split along the back, remove the black vein on the back.
Lemongrass smashed, chopped small.
Lime cut into quarters.
Bean sprouts and chives washed clean and drained, use a knife to cut small or a grater to grate horizontally into strands, then soak in water mixed with a bit of salt and a little lime juice to prevent browning.
Note: You should choose large shrimp, not too small for a better noodle experience.
-
Cook the broth
You place a pot on the stove, add about 500ml of water, add fish sauce, shrimp, and snakehead fish into the pot, turn on the heat and bring to a boil, then reduce to low heat.
Cook for about 20 minutes to ensure the fish and shrimp are cooked evenly, then remove the shrimp and snakehead fish, and strain to collect the clear broth from the fish sauce.
Add 800ml of water to the clear broth of the fish sauce, then add the remaining ingredients: lemongrass, chopped chili into the pot and turn on the heat to boil over medium heat.
Finally, add coconut water, season with 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, adjusting to family taste until just right. Cook for another 15 minutes until boiling then turn off the heat.
Skim off any foam for a better broth.
Note: The fish sauce varies by region, so adjust the amount of fish sauce for the noodle soup to suit your family’s taste.
