  • Raw vinegar is a type of spice traditionally fermented, so it has a natural sour taste and is often used to preprocess ingredients or create a distinctive delicious flavor for dishes such as soup, noodles, hot pot, etc.

How to cook Banana and Tofu Soup

  • Prepare the ingredients

    Pork should be washed thoroughly and cut into bite-sized cubes.

    Green bananas should be peeled and sliced thinly, then soaked in diluted salt water for 10 – 15 minutes to remove the sap.

    After that, rinse the bananas with cold water to clean them and let them drain.

    Tofu should be cut into small bite-sized pieces.

    Tomatoes and scallions should be washed, then cut the tomatoes into wedges and the scallions into bite-sized pieces.

    For the cilantro and perilla leaves, just wash them with water and chop them finely.

  • Stir-fry the meat

    Place a pot on the stove and add the pork, stir-frying over medium heat for about 1 minute to let the fat render out.

    Place a frying pan on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add the tofu and fry until golden brown on both sides, then remove and let drain.

    Add the bananas to the pot and use the fat rendered from frying the meat earlier to stir-fry the bananas.

    Then, season the pot with 1/2 tablespoon of salt and add the tomatoes, stir well to coat the ingredients with the seasoning.

  • Cook the Soup

    Continue to stir-fry for about 2 minutes, then add 2.5 liters of hot water, 300ml of vinegar, and 1/2 tablespoon of turmeric powder to the pot.

    After that, cover the pot and reduce the heat, then cook for 5 – 10 minutes until the ingredients are soft.

    When the bananas are soft, add the fried tofu to the pot and cook for another 3 minutes to let the tofu absorb the flavors, then add chopped green onions, Vietnamese coriander, and cilantro, and stir well.

    Finally, season the soup with 1 teaspoon of MSG and adjust the seasoning to taste before turning off the heat.

    The banana and tofu soup is delicious and flavorful, carrying the fragrance of green onions, Vietnamese balm, and coriander, seasoned just right. The refreshing sourness of tomatoes combined with the slightly bitter taste of green bananas is truly unique.
