How to prepare Duck Noodle

Prepare the ingredients
After purchasing the duck, place it in a bowl with 4 tablespoons of rice wine and 1 tablespoon of salt. Then, rub this mixture all over the duck and rinse thoroughly with water several times to drain.
Wash the sour bamboo shoots with water and let them drain well.

Boil the goose and sour bamboo shoots
Place a pot on the stove, turn the heat to high, and add the goose to the pot. Then, pour in enough water to cover the goose meat completely. Add 1/2 tablespoon of salt and 4 tablespoons of white wine into the pot and bring it to a boil.
When the water starts to boil and foam appears, remove the goose, place it in a bowl of cold water, wash it thoroughly, and let it drain.
Add sour bamboo shoots to a small pot with 500ml of water and 1/2 tablespoon of salt, then place it on the stove and bring it to a boil.
Boil the bamboo shoots for 3 – 5 minutes from the time the water starts boiling, then remove them, rinse thoroughly with water several times, and let them drain.

Place a pan on the stove, add 1 tablespoon of cooking oil to the pan. Wait for the oil to heat up, then add the sour bamboo shoots and stir-fry continuously with 1/2 teaspoon of salt and 1/3 teaspoon of monosodium glutamate until the bamboo shoots become firm.
