How to choose good sticky rice

  • You should choose sticky rice with large, evenly round grains, opaque white color, not broken, not crumbly or hairy, and with a particularly yellow color.
  • You can use Northern sticky rice or yellow flower sticky rice for the most delicious dish.

  • Rinse and soak sticky rice

    Rinse the sticky rice thoroughly to remove all remaining dust, then soak it for 2 hours to make it soft.

  • Prepare the pork

    Buy pork belly, rinse it with diluted salt water, then wash it again with clean water, drain, and cut it into square pieces about the thickness of a finger. Place the pork in a bowl.

    How to clean pork belly without odor:
    • Method 1: Soak the pork in salt water for 5 – 10 minutes to allow impurities in the meat to gradually release.
    • Method 2: You can use salt or lemon juice to rub on the meat, then rinse it again with clean water and drain.
    • Method 3: Use crushed ginger mixed with alcohol in appropriate proportions, rub the meat thoroughly, and then rinse it well with water.

  • Marinate the pork

    Marinate the fried pork with 1 tablespoon of soybean paste, 3 tablespoons of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, and 1 tablespoon of sugar.

    Add 1 slice of ginger and chopped green onions. Mix well and let it sit for about 15 minutes for the meat to absorb the seasoning.

  • Steam the pork sticky rice

    Put the soaked glutinous rice into a bowl, place the pork on top of the rice, and drizzle the marinating liquid evenly over the meat.

    Then, place the bowl in a steamer, cover it, and steam it for 50 minutes over medium heat to cook the sticky rice and make the meat tender.
