- It is advisable to choose fresh beef tendons, which are pink in color and have the strong characteristic smell of beef.
- Avoid buying beef tendons that are dry, leaking yellow fluid, or have an unusual odor, as these are signs that the tendons are decomposing.
- To ensure food safety and hygiene quality, you should buy beef tendons from reputable stores, food stalls, supermarkets, or large markets.
How to choose good fertilized duck eggs
You can buy pre-boiled fertilized duck eggs or buy fresh fertilized duck eggs to boil at home based on the following criteria:
- Good fertilized duck eggs are those that, when held up to the light, do not have much empty space at the top, and the inside should be full. The outer shell has a little white powder, and they feel heavy in your hand.
- You can also soak them in water for testing; fresh and good eggs will sink and touch the bottom, while bad eggs will float or lie sideways, and eggs floating to the surface are spoiled.

Prepare the beef tendon
After purchasing the beef tendon, rinse it briefly with water, drain, and cut it into bite-sized pieces.
Place a pot on the stove, add enough water to fill the pot to 1/3. Next, add the beef tendon, sliced ginger, and shallots to briefly boil to reduce the unpleasant smell. When the water in the pot boils, remove the beef tendon and let it cool.
How to eliminate the unpleasant smell of beef tendon: Use a roasted ginger root with burnt skin, then peel and crush the ginger. After that, rub the ginger directly onto the beef tendon, and it will have a more fragrant and delicious aroma.

Braised beef tendon
Place a pot on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add minced shallots and garlic to sauté until fragrant.
Next, add the beef tendon and stir-fry for about 3 – 4 minutes, then season the pot with 1/2 tablespoon of monosodium glutamate and 1/2 tablespoon of seasoning powder. After that, add 1 liter of water and herbal medicine to the pot, stir well, and braise for about 1 hour on low heat.
Finally, crack a fertilized duck egg into the pot and adjust the seasoning to taste, then cook for an additional 5 minutes before turning off the heat.
Tip: If you use a pressure cooker instead of a regular pot to braise the beef tendon, you only need to braise for about 30 – 40 minutes over medium-high heat.
