  • You should select beef tendon that has a strong, characteristic smell, as this indicates that it is still fresh.
  • Do not choose beef tendon that has a pale white, green, or yellow color, as this indicates it is no longer fresh and has been treated with chemicals.
  • Do not select beef tendon that has a foul smell or no smell at all. A foul smell indicates that it is old and no longer fresh, while a lack of smell means it has been treated with chemicals.

How to choose good dried shiitake mushrooms

  • Quality dried shiitake mushrooms will have a naturally bright brown color, with the cap and stem intact and firmly attached to each other.
  • When held, they feel dry and light, with a faint characteristic aroma when brought near the nose.
  • Do not choose shiitake mushrooms that have a strange foul smell, show signs of mold, or have unusual spots on their surface.

  • Prepare the vegetables

    First, blanch the shiitake mushrooms in boiling water for 5 – 7 minutes to allow them to expand and become clean. After that, remove the mushrooms, rinse them with cold water, cut off the stem, and slice the caps in half.

    How to properly soak shiitake mushrooms

    • Soak the mushrooms in cold water for about 1 hour, gently squeezing them to remove any musty smell and dirt. Then, take them out, rinse with clean water, squeeze out the excess water, and let them drain.
    • You can also soak the mushrooms in hot water to save time. When the mushrooms have expanded, transfer them to a bowl of cold water, gently squeeze out the excess water, rinse again, and let them drain.

    Peel the carrots, wash them clean, shape them into flowers (if desired), and then cut them into bite-sized slices.

    Wash the bok choy, remove any bad leaves, and cut them in half.

    Next, briefly blanch the carrots and bok choy in boiling water and remove them to cool.

  • Preparing Beef Tendons

    Wash the beef tendons thoroughly with water, then boil them with 1 teaspoon of salt and 1 crushed ginger root over medium heat. When the tendons firm up and change color, take them out and rinse with cold water.

    Tips to eliminate the smell from beef tendons:
    • Dilute vinegar with water and then bring it to a boil. Add the beef tendons to the mixture and blanch until the water just boils again, then remove and place in cold water.
    • Use a bit of white wine to rub the beef tendons, then rinse with clean water.
    • Rub the beef tendon piece with a little crushed ginger, then rinse well with water.

    After boiling, slice the beef tendons diagonally into pieces about 1/2 finger thick.

    Next, briefly blanch the beef tendons in boiling water again for about 2 – 3 minutes, then remove and drain.

  • Stir-fry the dish

    You sauté 2 teaspoons of minced garlic with 1 tablespoon of cooking oil in a pan. Next, add the shiitake mushrooms to the pan and stir for 1 – 2 minutes over medium heat.

    Then, add the beef tendons, carrots, and green onions and stir together for 1 – 2 minutes before adding 1/2 cup of water. Season with 1 tablespoon of oyster sauce, 1 teaspoon of salt, and stir well.

    Dissolve 1 tablespoon of tapioca starch in 1 tablespoon of water. Turn the heat up and add the diluted tapioca starch, stirring until the sauce thickens.

    Adjust the seasoning to taste, then turn off the heat and plate the dish.
