Prepare the vegetables
First, blanch the shiitake mushrooms in boiling water for 5 – 7 minutes to allow them to expand and become clean. After that, remove the mushrooms, rinse them with cold water, cut off the stem, and slice the caps in half.
How to properly soak shiitake mushrooms
- Soak the mushrooms in cold water for about 1 hour, gently squeezing them to remove any musty smell and dirt. Then, take them out, rinse with clean water, squeeze out the excess water, and let them drain.
- You can also soak the mushrooms in hot water to save time. When the mushrooms have expanded, transfer them to a bowl of cold water, gently squeeze out the excess water, rinse again, and let them drain.
Peel the carrots, wash them clean, shape them into flowers (if desired), and then cut them into bite-sized slices.
Wash the bok choy, remove any bad leaves, and cut them in half.

After boiling, slice the beef tendons diagonally into pieces about 1/2 finger thick.
Next, briefly blanch the beef tendons in boiling water again for about 2 – 3 minutes, then remove and drain.

You sauté 2 teaspoons of minced garlic with 1 tablespoon of cooking oil in a pan. Next, add the shiitake mushrooms to the pan and stir for 1 – 2 minutes over medium heat.
Then, add the beef tendons, carrots, and green onions and stir together for 1 – 2 minutes before adding 1/2 cup of water. Season with 1 tablespoon of oyster sauce, 1 teaspoon of salt, and stir well.
Dissolve 1 tablespoon of tapioca starch in 1 tablespoon of water. Turn the heat up and add the diluted tapioca starch, stirring until the sauce thickens.
Adjust the seasoning to taste, then turn off the heat and plate the dish.
