Pork bones 1 kg Pork tenderloin 200 g Pork sausage 200 g Fresh shrimp or dried shrimp 1 cup (200g) Sweet corn 200 g Lotus seeds without hearts 150 g Mushrooms 100 g Quail eggs 20 eggs Chicken eggs 2 eggs Tapioca flour 30 g Green onions & coriander 100 g Onion 1 bulb Shallots & garlic 50 g

How to prepare Mixed Soup

  • Prepare the ingredients

    Bone marrow: Wash thoroughly. Prepare a pot of about 200ml of boiling water.

    Add the bones and simmer for 5 minutes, then remove the bones and discard the water. This step will help you obtain the sweet flavor without the greasiness of the bone marrow. Then, put the bones back into the pot with another 2.5 liters of water and simmer for 1-2 hours. Every 10-15 minutes, use a spoon to skim off the foam that rises to the surface of the broth.

    While the bones are simmering, prepare the other ingredients.

    Lean meat: Wash thoroughly, drain. Dice the meat and marinate it with 1 teaspoon of seasoning, half a teaspoon of monosodium glutamate, 1/3 teaspoon of pepper, and mix well. Let the meat marinate for about 20 minutes to absorb the flavors.
    Shrimp: Peel, remove the heads, and devein. After cleaning the shrimp, steam them until cooked (using a water bath).

    Processed meat: Cut into very small strips. Lotus seeds: Wash and boil until cooked with a little salt. Quail eggs: Boil until cooked and peel.

    Corn: Wash, remove the husk and silk, separate the kernels, and set aside. Mushrooms: Clean them. If using enoki mushrooms, cut them in half for easy eating. Onion: Peel, wash, and slice thinly.

    Shallots and herbs: Clean and chop finely. Specifically, mince the shallots and garlic.

  • Cooking the Soup

    Place a cast-iron pan on the stove, wait for it to heat up, then add a little oil to coat the bottom of the pan. Add chopped onion and garlic along with 1 teaspoon of chili powder and sauté until fragrant.

    Add to the pot of simmering bone broth. Wait for the water to boil, then add the marinated tenderloin and season to taste so that the broth is flavorful.

    Next, add corn and mushrooms to the pot and cook for 5 minutes.

    Dissolve the tapioca flour in a small bowl of water, stir well until dissolved, then pour the mixture into the simmering soup.

    Next, beat 2 eggs, add a little fish sauce or salt, then pour it into the soup pot and stir well. Adjust the seasoning to taste.

    Add sliced pork sausage, shrimp, lotus seeds, quail eggs, onions, and a bowl for serving. Then pour the soup over the ingredients until they are submerged. Add fresh herbs, green onions, and pepper.

    This dish is very appealing and easy to eat when served hot, with a subtle sweet flavor. Cooking soup with a variety of mushrooms, vegetables, meat, and eggs makes this dish well-rounded and nutritionally balanced for the body.

Tips for successfully making mixed soup

  • Since it is mixed soup, you can also add or reduce ingredients as you wish and adjust the quantity of the ingredients according to the ratio that suits your family’s preferences.
  • The soup has a thick and creamy consistency, so you need to prepare tapioca starch. However, you can also replace tapioca starch with cornstarch.
  • When cooking mixed soup, you need to use a ladle to gently stir the pot of soup so that the ingredients do not clump together.
  • If you want the soup to be a bit thicker and creamier, you can use more tapioca starch.
