How to make Mung Bean Dessert

Preparation and soaking mung beans
Wash the mung beans thoroughly with water three times, removing any damaged or broken beans that float to the surface. Next, place the beans in a bowl and add enough water to soak them for 3 – 4 hours until the beans soften.

Cooking mung beans
After the mung beans have soaked and softened, remove them, rinse with water 2 times to clean, and then put them into pot. Add enough water to cover the mung beans and add 1/2 spoon of salt.
Place the pot of mung beans on stove, bring to a boil over high heat until bubbles form, then use a ladle to skim off all the white foam on top, cover the pot, reduce the heat to the lowest setting, and simmer the beans for 40 minutes.
After 40 minutes, when the mung beans are soft, add 250g of sugar to the pot and stir well with a ladle. Next, add 2 tablespoons of coconut milk and stir continuously for 7 minutes. Then turn off the heat and cover the pot again.
Note: When adding sugar and coconut milk, you must stir continuously for 7 minutes to prevent the dessert from burning at the bottom of the pot!After the dessert pot has cooled for 5 minutes, scoop all the dessert into a large bowl and let it cool completely.
