Vegetarian beef slices 100 grams Pho noodles 1 kg White cabbage 1 piece Cassava 1 piece Carrot 1 piece Onion 2 pieces Celery 1 stalk Rock sugar 10 grams Ginger 1 piece Shallots 2 pieces Star anise 3 pieces Cinnamon 10 grams (2 sticks) Water 4 liters Vegetarian seasoning 5 tablespoons Salt 3 teaspoons Sugar 1 tablespoon

How to Prepare Vegetarian Pho

  • Prepare the vegetarian beef slices

    After purchasing the vegetarian beef slices, soak them in boiling water for about 10 minutes until soft, then rinse them with clean water.

    Add oil to the pan, wait for it to heat up, then stir-fry the vegetarian beef slices, adding 1 tablespoon of vegetarian seasoning, 1 teaspoon of salt, and 1 tablespoon of sugar. Stir well and then turn off the heat.

  • Prepare other ingredients

    Wash the carrots, cassava, and white radish, peel lightly and cut into pieces.

    Peel the shallots. Peel the ginger and slice it.

    Place a pan on the stove, add star anise, a piece of cinnamon, 3 shallots, and 1 sliced ginger, and roast until fragrant.

  • Cook the broth

    Add 4 liters of water to the pot and bring to a boil, then add the vegetables, 1 teaspoon of salt, and 1 tablespoon of rock sugar. Simmer on medium heat for about 60 minutes to sweeten the broth.

    Then add the star anise, cinnamon piece, shallots, and ginger into the pot of broth and simmer for an additional 60 minutes.

    Use a skimmer to remove vegetables and star anise, cinnamon stick, red onion, and ginger from the broth pot, add the vegetarian beef slices, and add 4 tablespoons of vegetarian seasoning and 1 teaspoon of salt.

    Briefly dip the rice noodles in boiling water. Then, put them in a colander and rinse with cold water. Finally, rinse with hot water once more.

    Place the noodles in a bowl. Arrange the vegetarian beef on top, add a few slices of carrot and daikon radish, sprinkle with finely chopped cilantro, and ladle the broth over it.

    Delicious vegetarian beef pho, light and fragrant with a sweet and aromatic broth made from vegetables, and the vegetarian beef slices are very appealing. You can add a little chili sauce or soy sauce to enhance the pho, and it will be wonderful!
