How to choose fresh ingredients
How to choose fresh pork ribs
- Choose ribs that are bright pink, firm to the touch, and have good elasticity.
- It is advisable to choose ribs with flat, small bones because this type has more meat and less bone than larger ribs.
- Avoid choosing ribs that are pale green, mushy, leaking slimy fluid, or have an unusual odor.
How to choose fresh beetroot
- Choose beetroot with a slightly smooth outer skin, not wrinkled, with the stem tightly attached to the root, and fresh leaves.
- When picked up, the beetroot should feel heavy and firm. Choose roots with a round bottom as they usually have a sweeter taste; those with a flat bottom tend to be less sweet.
- Avoid choosing beetroot that is bruised, soft, has dark spots, wilted leaves, cracked skin, or leaking fluid as these are old roots and not good for health.
How to choose delicious starchy potatoes
- Choose potatoes that are yellow in color, do not choose white ones as they lack sweetness and nutrients.
- Potatoes should feel heavy, firm, have smooth skin, be intact, and free from spots, pests, or black eyes on the skin.
- Do not choose sprouted potatoes or those whose skin has turned green, as these are very toxic to health.
- Avoid buying potatoes with wrinkled skin, scratches, that feel soft when pressed, rotten, or with liquid seeping out, as these are old potatoes, not tasty, and lack nutrients.
How to choose fresh carrots
- Choose carrots of moderate size, elongated shape towards the tail, with smooth skin, and feel heavy and firm when held.
- Good carrots will have bright, dark orange skin, fresh green tops that are firmly attached to the body.
- Do not choose those with wilted tops, bruised roots, or any dark spots.
- Avoid buying overly large carrots with thick tops and stems, as these are old ones with a lot of fiber and few nutrients.
How to prepare Soup
-
Prepare the pork ribs
Buy pre-cut pork ribs from the market, blanch them in boiling water for about 5 minutes, then wash thoroughly with water 2 – 3 times and drain.
How to remove the unpleasant smell from pork ribs:- Method 1: Add a little salt to the ribs and rub for about 2 – 3 minutes, then rinse thoroughly with water.
- Method 2: Use rice vinegar or white wine to wash the ribs and then rinse with water 2 – 3 times.
- Method 3: Alternatively, you can blanch the ribs with boiling water and a few smashed ginger slices for about 5 minutes, then rinse with water, which can effectively remove the smell of the ribs.
-
Prepare the vegetables
Beetroot, carrots, potatoes, and white radish should be peeled, then washed thoroughly with water multiple times and cut into bite-sized pieces.
How to peel potatoes without browning:- Method 1: After peeling, soak the potatoes in cold water mixed with a little vinegar for about 5 minutes, then rinse thoroughly with water.
- Method 2: Additionally, after peeling, you can soak the potatoes in cold water or diluted salt water to prevent them from browning.
-
Cook the soup
Place a pot of boiling water on the induction stove over medium heat and briefly blanch the beetroot for about 2 – 3 minutes, then remove it.
Put another pot of water on the induction stove, when the water boils add the pork ribs, and cook over medium heat for about 8 – 10 minutes until the ribs are really tender.
Add 1 teaspoon of sugar, stir well, and then add the chopped carrots, cooking for about 1 – 2 minutes.
Next, add the diced potatoes and cook for about 2 minutes, then add the remaining white radish and cook for an additional 2 minutes.
Season with 1 tablespoon of salt, 1 tablespoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, stir well, taste and adjust the seasoning to your liking, then turn off the heat.
