- Pay attention to buy shrimp with slightly curved bodies, firm flesh, intact shells, and heads tightly attached to the body.
- Do not buy shrimp with spread-out, loose tails, missing tail fins, and not neatly arranged together. They may have been caught a long time ago and soaked in preservatives.
How to choose fresh and delicious corn
- Husk: You should choose corn with green outer husks, not dried out, and the corn silk should still be soft and smooth, with no browning or wilting at the base. Additionally, the layers of the outer husk should tightly hug the corn.
- Corn kernels: Good corn will have plump, evenly sized, shiny, and straight kernels. You should not choose corn that is too large; only select those that are moderately long and slender.

Prepare the shrimp
Peel the shrimp and remove the black vein, then wash them thoroughly and let them drain.
Next, dice the shrimp and marinate with 1/2 teaspoon of seasoning, sugar, and pepper each, mixing well to let the shrimp absorb the spices.

- Count backward from the shrimp’s tail to the second groove connecting two segments of the shell, insert a toothpick through this spot and gently pull the black vein to remove it.
- You can also use a toothpick to gently pry the head of the shrimp to see the black vein. Use your fingers to carefully pull this black thread out, and the shrimp will be clean.

Wash the quail eggs thoroughly and then place them in a pot of water to boil for about 5 minutes. After that, let them cool and peel the shells.

When buying straw mushrooms, use a knife to cut off the stems and soak them in diluted salt water for 20 minutes.After 20 minutes, rinse them thoroughly with water, drain, and slice them thinly.
Peel the carrots, wash them, and then dice them.
Wash the scallions and cilantro and chop them finely.
