How to choose potatoes
- You should buy potatoes that are firm, heavy, have smooth skin, intact, without spots, pests, black eyes on the skin, not rotten, with liquid oozing out.
- It’s best to choose potatoes with deep dents, not sprouting on the body because potato sprouts can be highly toxic.
- Avoid buying potatoes with wrinkled skins, if pressed the skin feels soft, most of these potatoes are old, have withered, and lack many nutrients inside, with a bland taste.

How to make Potato Milk

Prepare the potatoes
First, wash the potatoes to remove dirt, peel them, then cut them into 4 pieces and soak them in a bowl of water mixed with about 1 tablespoon of salt for about 15 – 20 minutes.
Then, rinse them a few times with water to clean, and drain in a colander.

Cook the potatoes
Place the pot on the stove, add all the potatoes and about 500ml of water, turn on high heat, and simmer the potatoes for about 20 minutes.
Use chopsticks to test; if the potatoes are soft and fall apart, then turn off the stove and let them cool before blending.

Blend the potatoes
When the potatoes have cooled, place them in a mortar and add about 1 liter of water. Turn on the machine at the highest setting and blend the mixture for about 5 minutes until smooth.

Cook the potato milk
Next, place a new pot on the stove, add the blended potato mixture and another 500ml of water, then turn the heat to medium to bring it to a boil.
Stir continuously so the milk doesn’t burn, after about 5 minutes add 380ml of condensed milk. When the potato milk mixture starts to form tiny bubbles, add a bit of pandan leaves and 440ml of sweetened fresh milk, while lowering the heat to low.
Note: During the cooking of the milk, you should stir continuously to prevent the milk from burning.Cook for about 15 minutes, when the milk starts to boil gently, skim off the foam, turn off the heat and let it cool!
