- There are many ways to process chicken meat to be clean and odorless. You can eliminate bacteria in chicken by soaking it in saltwater for about 30 minutes (depending on the weight of the chicken) and then rinsing it thoroughly with clean water several times.
- You should also clean the remaining feathers on the chicken skin and neutralize the smell by rubbing lemon, vinegar, or ginger on the chicken skin and then rinsing with clean water to eliminate the odor of the chicken meat.

Prepare other ingredients

Put about 3 liters of water in a pot on the stove, when the water boils, add the chicken wings and bones and boil for about 10 minutes.

When the chicken is cooked, add 1 crushed ginger and 100g of shiitake mushrooms to the pot along with 13 tablespoons of fish sauce, 2 tablespoons of cane sugar, and 1/2 teaspoon of salt, then cook over medium heat for about 30 minutes, taste the seasoning and turn off the heat.
Tip:
- Cane sugar will help the soup have a sweeter, more delicious flavor. However, you can also use regular sugar if you don’t have cane sugar.
- Before adding mushrooms, skim off the foam to make the broth clearer.

You place a new pot with about 2 liters of water on the stove, when the water boils, add 100g of dry noodles and boil for about 5 minutes until the noodles are just soft.
