You can buy fried tofu directly at traditional markets or buy pre-packaged ones. However, to ensure health safety, you should buy freshly made white tofu from tofu shops and fry it yourself!
- Color: Good tofu will always have a creamy white color. In contrast, tofu with gypsum is usually yellower; the more yellow it is, the more gypsum it contains. Therefore, you should avoid buying pieces of tofu that are yellow or yellowish.
- Touch: If the tofu feels soft and light to the touch, you should buy it. Heavy, firm, slightly hard, and square pieces of tofu should not be purchased.
- Smell: Pure tofu will have a pleasant aroma, while tofu with gypsum will either smell of lime or have no smell at all.
- Taste: Good tofu will have the characteristic rich flavor of soybeans, while tofu containing a lot of gypsum will taste astringent.

Prepare the ingredients
First, wash the tofu thoroughly and cut it into bite-sized cubes.
Next, break the green beans into pieces about 3 finger lengths long, then wash and drain.
Peel the carrots and radishes, wash them, and cut them into slices about 1 small finger thick.
Cut the bitter melon in half, remove the seeds, wash it, and cut it into bite-sized pieces.

Braised tofu and vegetables
Place a pan on the stove, add a little cooking oil and heat it up. When the oil is hot, add the onion and garlic and sauté them until fragrant over medium heat.
Then, add the carrots, radishes, 2 tablespoons of soy sauce, 1 teaspoon of vegetarian seasoning, 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, 1 tablespoon of chili sauce, and 1 tablespoon of oyster sauce. Stir the mixture for about 5 minutes over medium heat.
