How to choose fresh ingredients
How to choose fresh chicken
- Choose chicken thighs with thin, shiny yellow skin that feels smooth to the touch.
- Choose chicken with naturally pinkish-red meat, not too dark or too pale, with good firmness and elasticity.
- If you buy chicken thighs sold in supermarkets, you should carefully check the expiration date and packaging date, ensuring that the packaging and labels are intact.
How to choose fresh shrimp
- Choose shrimp with a transparent shell, uniform color, with the head and body firmly attached to each other.
- When buying shrimp, you should gently press with your finger and move it on the shrimp shell; if it feels gritty as if there are sand particles, do not buy it.
- Avoid choosing shrimp that are slimy, with blackened legs and an unusual foul smell.
How to choose fresh mackerel
- Choose mackerel with bright, clear eyes; when pressing on the fish’s flesh, it should have good elasticity.
- Avoid choosing fish with soft, mushy flesh, cloudy eyes, and slightly sunken in, with an unusual foul smell.
- To buy the freshest mackerel, you should go to the market early in the morning because the fish has just been caught and is very fresh.
How to choose fresh and delicious tuna
- Choose fish with sparkling and clear eyes, bright red gills, and when you press the belly, it should feel firm.
- For frozen tuna, check the expiration date when buying; it’s best to use it within one month from the catch date.
- Avoid choosing tuna that has an unusual smell, cloudy eyes, and mushy flesh.
