How to choose fresh pork leg
- Choose a solid piece of pork leg, with the meat fibers having a dry cut, and the hooves intact without being loose, indicating that the pork leg is fresh.
- The meat should have a bright pink color, no fishy smell, and should bounce back when pressed.
- Additionally, it is advisable to choose the front leg as it has thinner, softer, sweeter meat with more tendons.

Prepare and Marinate Pig Trotters
After purchasing pig trotters, remove any remaining hard hairs on the skin, then use coarse salt to scrub the entire pig trotter thoroughly, and rinse well under running water.
Next, use a sharp knife to make a cut along the outer side of the pig trotter from top to bottom, cutting until you reach the bone, then gently remove this bone.
At this point, chop the pig trotter into bite-sized pieces.
Peel and finely chop some ginger and 2 cloves of garlic.
Marinate the meat and pig trotters with 1 teaspoon of salt, 1 tablespoon of sugar, 1 tablespoon of fish sauce, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of pepper, chopped ginger, and minced garlic.
Mix the pig trotters well and let them sit for about 30 minutes to absorb the spices.

Bamboo shoots should be peeled clean, cut into bite-sized cubes, and soaked in brine for about 10 minutes.
Place a pot of water on the stove, bring to a boil, then add 1/2 tablespoon of salt and the cut bamboo shoots, and boil for 5 minutes. After that, remove and rinse with water.

Stir-fry the pork hock
Place another pot on the stove, set the heat to medium, then add 4 tablespoons of cooking oil and heat it up. When the oil is hot, add all the chopped shallots, galangal, and smashed lemongrass, and sauté until fragrant.
Next, add the entire pork hock, stir-fry for 5 – 10 minutes until the pork hock is seared. At this point, add 8 kaffir lime leaves and 1 tablespoon of fish sauce to the pot, stirring well.
Then, add the bamboo shoots and stir-fry with the pork hock for 10 minutes to let the flavors soak into the bamboo shoots.

Cook pig trotter hot pot
Pour 1.5 liters of water into the pot along with 1 onion cut into wedges, simmer for about 5 minutes then add the green onions and sour vegetables.
Cover the pot, reduce the heat and simmer for 1 hour until the pig trotter is tender.
After simmering the hot pot, you can check if the pig trotter is tender by using chopsticks to pierce the meat; if the chopsticks go through easily, the trotter is cooked and tender.
Season the hot pot with 1/2 teaspoon of salt, 2 teaspoons of seasoning powder, and 20g of rock sugar. Cook for another 5 minutes, add 5 dried chili peppers on top, stir well, then adjust the seasoning to taste and turn off the heat.
Tip: If you don’t have rock sugar, you can use white granulated sugar instead, but using rock sugar will give the broth a smoother sweetness. -
