  • You should choose pork bones that have a good mix of bone, meat, and fat so that the soup is both sweet and deliciously rich.
  • Choose pork bones that have a bright light pink color; when you gently press the meat and fat, it should feel firm and not mushy.
  • Do not buy pork bones that look purplish or have an unusual fishy smell, as these are bones that have been stored for too long and are no longer fresh.

How to choose safe and quality dried bamboo shoots

  • Good dried bamboo shoots are light yellow, with an amber color and a shiny appearance. They should retain a distinctive aroma, have a thick, wide texture, feel dry to the touch, and can be easily broken.
  • Choose bamboo shoots that are uniformly colored, with short joints, and no fibers. Select more of the tips, as they will be softer and tastier than the base when cooked.
  • Avoid purchasing bamboo shoots that are overly shiny or too dull, and have strange smells (musty odor). Steer clear of bamboo shoots that show blotchy spots due to mold, or feel soft or can be easily broken.
  • Prioritize purchasing dried bamboo shoots that are stored in labeled plastic bags, with a clear address and origin source.

How to make Dried Bamboo Shoot Soup with Bones

  • Prepare the ingredients

    Dried bamboo shoots, after being purchased, should be rinsed briefly with water and then placed in a bowl submerged in water for about 20 minutes until they swell and soften, then rinse and squeeze out the water.

    Next, bring a pot of water to a boil on the stove over high heat for about 2 minutes until the water boils, then add the drained dried bamboo shoots, blanch for about 2 minutes, then rinse again with water and squeeze dry.

    Then add 1/2 tablespoon of cooking oil to a pan, add all the blanched dried bamboo shoots and 1/2 tablespoon of seasoning, stir-fry over low heat for about 3 minutes, when the seasoning is evenly absorbed into the dried bamboo shoots, turn off the heat and scoop out into a basket.

    To eliminate the odor of the pork bones, after purchasing, simply wash them clean with a mixture of diluted saltwater, then rinse with water and let them drain.

    How to clean pork bones without odor:

    • Method 1: After cutting the pork bones, to eliminate the odor, use vinegar along with a little ginger that has been crushed, rub it on the bone for about 5 minutes, then rinse again with water.
    • Method 2: To eliminate the odor of the pork bones, soak them in rice water for about 15 – 20 minutes, then rinse with water; this way, the bones will no longer have an odor.

  • Cook the soup

    Add 1 spoon of cooking oil along with 1 tablespoon of shallots and 1 tablespoon of minced garlic into the pot, stir-fry on low heat until fragrant, then add the pork bones.

    Stir-fry for another 3 minutes until the pork bones are browned, then pour in 600ml of water and simmer on medium heat for about 15 minutes until the bones are tender.

    Add all the sautéed bamboo shoots along with 1/2 tablespoon of salt, 1 tablespoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of sugar into the pot.

    Stir well and cook for another 5 minutes until the seasonings dissolve and the bamboo shoots are soft, then taste and adjust the seasoning as needed before turning off the heat.

    Finally, add 1/2 tablespoon of fish sauce to the pot, mix well for a fragrant aroma, and you can serve it in a bowl to invite your friends and family to enjoy!

    Tip: To make the soup clear and appealing, remember to regularly skim the foam off the pot while cooking!
