How to make Duck Congee

Prepare ingredients and cook congee
First, wash the rice and green beans and soak them in water for 4 hours.
After soaking, put the beans and rice into a pot and cook with 2 liters of water.
After buying the duck, pluck any remaining feathers (if any) and then roast it until the skin turns yellow. Then wash it again and cut the duck into bite-sized pieces. Roasting will help eliminate the smell from the duck, and it also makes the duck meat more fragrant.

Marinate and stir-fry the meat
Pound 5 cloves of shallot, 3 cloves of garlic, and 1 piece of turmeric until fine, then mix with minced lemongrass and soy sauce, and marinate in the duck meat. After that, mix well and let it sit for about 15 minutes for the duck meat to absorb the seasoning.
Heat a pan on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add 1 tablespoon of minced garlic, 1 tablespoon of sliced shallots, and 2 crushed chili peppers to the pan. Once the shallots, garlic, and chili are fragrant, add the duck meat to stir-fry.
Add about 200ml of water to the pan and stir-fry until the meat is firm, then transfer it all to the porridge pot.
Keep the heat low to simmer until the porridge is cooked and the duck meat is tender, then add 1 tablespoon of seasoning, 2 tablespoons of fish sauce, and 1 teaspoon of salt. Adjust the seasoning to taste, turn off the heat, and serve in a bowl.
Garnish with a bit of Vietnamese coriander and cilantro according to your preference, and you can enjoy it right away.
