- For pre-prepared ducks: Choose ducks with bright skin color, pale yellow leaning towards white, without bruises or blood clots. When pressing the meat, it should feel firm and elastic to indicate it’s good duck. Do not buy if the duck appears dull, soft, or has a foul smell.

- Choose fresh bamboo shoots that are not bent, with a smooth surface, free from spots, and not wilted.
- Visually, the bamboo shoots should have a thin, crispy skin; avoid those that are too white. The preferred color is yellow-brown with some stripes.
- You should prioritize selecting smaller shoots, as smaller bamboo shoots tend to be thicker and have a richer flavor. You should choose bamboo shoots from the bamboo species for their sweet taste and ease of preparation.

Prepare the duck meat

Next, add the chopped duck meat into a pot, add 2 chopped lemongrass stalks, 2 finely chopped shallots, 2 tablespoons of seasoning powder, 1 teaspoon of monosodium glutamate, 1 tablespoon of soy sauce, and finally 1 teaspoon of pepper, mix well and marinate the duck meat for about 30 minutes.
