How to Prepare Sour Plum Duck Stew

  • Prepare the Duck

    To eliminate the smell of the duck, use salt and a few slices of lemon to rub all over the duck. Then, rinse thoroughly with water several times, drain, and chop into bite-sized pieces.

    Lemongrass is cut at the root, washed clean with water, drained, and then chopped finely. Sour plums are peeled and washed with water and allowed to drain.

    Shallots and garlic are peeled and minced. Vietnamese coriander and knotweed are washed clean, drained, and then chopped finely.

    Ginger is peeled, rinsed briefly with water, and then minced. Green onions are trimmed at the roots, washed clean, drained, and then chopped finely.

  • Marinate the duck

    Put the cut duck pieces into a large pot. Marinate the duck with 1 tablespoon of fish sauce, 2 teaspoons of seasoning powder, 2 tablespoons of monosodium glutamate, 1 teaspoon of pepper, 1/2 of chopped garlic, 1/2 of chopped shallots, 1/2 of chopped ginger, 1/2 of chopped coriander, 1/2 of chopped rice paddy herb, 1/2 of chopped green onions, 1/2 of chopped lemongrass, then mix well to let the duck absorb the spices.

    After that, let it rest and marinate the duck for 30 minutes.

  • Cook the duck with sour plums

    Place a pot on the stove, add 3 tablespoons of cooking oil into the pot. Wait for the oil to heat up, then add the remaining shallots, garlic, lemongrass, ginger, and green onions to sauté until golden and fragrant.

    Then, add the duck meat and stir-fry until the meat is browned, then add enough water to cover the surface of the meat. Next, add the sour plums and bring to a boil over high heat.

    When the water in the pot boils, reduce the heat and braise until the duck meat is tender, then season to taste and turn off the heat.

    Scoop the duck with sour plums into a bowl, sprinkle the remaining rice paddy herb and coriander on top to complete.

How to Prepare Duck Stewed with Sour Fruits using Electric Pressure Cooker

  • Prepare the Ingredients

    Wash the duck, let it drain, then cut it into bite-sized pieces.

    Trim the lemongrass, wash it clean. Cut the lemongrass into 2 parts, slice the top part thinly and crush the bottom part.

    Peel the ginger, rinse it, and chop it finely. Remove the stems from the chili, wash it clean, and chop it finely. Wash the sour fruits and let them drain.

    Peel the garlic and mince it. Trim the roots of the spring onion and coriander, wash them clean, and chop them finely.

    Select the high-temperature sauté mode, and once the pot is hot, add 1/2 tablespoon of cooking oil. When the oil is hot, add minced garlic and sauté until fragrant. Then, add the duck meat and stir well until the meat is firm.

    Season the pot with 1 teaspoon of salt. Stir well so that the duck meat absorbs the spices. Then, add the smashed lemongrass stalks, chopped chili, and sour plums, stir-frying for about 3 more minutes before adding 1/2 liter of coconut water and covering the pot again.

    At this point, choose the high-pressure cooking mode for 15 minutes, then release the steam quickly.

    Next, open the pot, add chopped green onions and coriander, stir for another 2 minutes, and then taste and adjust the seasoning as needed.

    Finally, turn off the heat and serve everything in a bowl.
