How to choose fresh ingredients

How to choose fresh chicken eggs

  • Eggshell: Fresh eggs will have a thin white powdery layer on the outside, and feel rough or heavy to the touch. If the eggshell is smooth and shiny or has cracks, it indicates that the eggs have been stored for too long and are not fresh.
  • Shine a light: You can shine a light on the egg using a bulb or roll a newspaper and hold it up to the sunlight. If you see that the air cell in the egg is still small, the yolk is round and does not move, and the white is clear with an orange-red or pale pink color, it is a fresh egg. In contrast, an old egg will have a red color with many moving streaks around and a large air cell.
  • Shake gently: Hold the egg up to your ear and shake it gently; if you hear a sound, it means the egg is old and has been stored for a long time. If there’s no sound but you feel strong movement inside, it indicates a bad egg, possibly from a hen that is still incubating…
  • If possible, you should use a 10% salt solution to drop the egg into. If the egg sinks to the bottom of the water, it is freshly laid. If the egg floats on the surface, it has been stored for more than 5 days.

How to choose fresh spinach

  • Choose vegetables with bright green stems, roots that are red, and not broken.
  • The leaves should be dark green but not too dark, indicating that they are still young and contain many nutrients.
  • Avoid choosing vegetables that are bruised, yellowed, wilted, or rotten as they will not taste good and will lose their nutrients.
