  • You should choose tilapia with clear and slightly bulging eyes, gills that are pink-red, scales that are shiny and tightly attached to the body of the fish, as these are fresh tilapia.
  • Fresh, quality tilapia will have an intact, plump body. The flesh will be firm and elastic when pressed, and the skin should not have any unusual colors.
  • Avoid choosing fish with swollen bellies, pale colors, or a strong fishy smell, as these may be fish that are no longer fresh and will not taste good when eaten.

  • You should choose sour leaves that are intact and have a dark green color, as these are mature leaves that can create a more appealing sour taste than lighter-colored leaves.

How to prepare Tilapia soup with sour leaves

  • Prepare the ingredients

    Sour leaves should be picked for the leaf part and then soaked in diluted salt water for about 15 minutes, then taken out and rinsed clean with water, and drained. Shallots are peeled and minced.

    For the tilapia, you use a knife to gut it, remove the gills, and scale it. Then, rub the tilapia with a little salt to reduce the fishy smell, and remember to clean the black stripe inside the fish’s belly to avoid a muddy smell.

    Next, rinse it thoroughly several times with water and cut the fish into bite-sized pieces, about 3 finger lengths.

    After the fish is cleaned, transfer it to a bowl and marinate with 1 tablespoon of fish sauce for about 30 minutes for the fish to absorb the seasoning.

    • Method 3: Crush a piece of ginger and put it in water, then add the fish to the mixture and soak for about 5 minutes.

    Place a pot on the stove, add 1 tablespoon of cooking oil into the pot over medium heat. Once the oil is hot, add the minced shallots and sauté until fragrant.
