How to choose fresh ingredients
How to choose fresh red tilapia
- To make the best giang leaf soup with red tilapia, you should choose live fish that are swimming vigorously in the tank.
- If buying prepared fish, choose those with clear eyes, red gills, good elasticity when pressed, shiny scales, white-colored anus that is retracted, and a flat belly without bulging.
- Avoid buying live fish that are swimming weakly, lethargically, or prepared fish that have a swollen belly, pale color, or a fishy or slightly sour smell.
How to choose fresh and delicious giang leaves
- Choose giang leaves that are dark green, as these are mature leaves that will have a better sour taste compared to lighter-colored leaves.
- Choose giang leaves that are intact, not bruised, and do not have too many white spots or black blemishes on them.
How to choose fresh and delicious tomatoes
- It is recommended to choose tomatoes with bright red skin, uniform color, not scratched or damaged, feel firm and heavy when held, and have the characteristic smell of tomatoes.
- Prioritize choosing tomatoes with green stems, tightly attached to the top of the tomato.
- Do not buy tomatoes that are red mixed with green, tomatoes with black spots on the skin, or tomatoes that are mushy and too soft.

Cooking sour leaf soup with red tilapia
Place a pot on the stove, add 1/2 tablespoon of cooking oil, and heat. Add sliced shallots and crushed garlic to sauté until fragrant. When everything is aromatic, add 1.5 liters of filtered water (equivalent to 1.5 bowls of water).
When the water boils, add the fish and cook over medium heat for about 5 – 8 minutes until the fish is cooked, then season with 1/2 tablespoon of sugar, 1/2 tablespoon of seasoning powder, and 1/2 tablespoon of salt.
Then add the quartered tomatoes and cook for 3 minutes, then add the prepared sour leaves and chopped green onions, and turn off the heat. Adjust the seasoning to taste, sprinkle with 1/2 teaspoon of pepper to complete.
Tip: Add the sour leaves and turn off the heat immediately; if you boil them for too long, the sour leaves will impart more sourness, making the soup less tasty. -
