How to choose good reishi mushrooms
- You should choose mushrooms that are covered with a fine layer of dark red powder on the outside, and the underside of the mushroom cap should be lemon yellow with a few white scratches.
- Good reishi mushrooms usually have a moderate size, not too big or too small, with a cap diameter of about 15 – 18 cm.
- When selecting mushrooms, you should choose those with a fragrant smell, easy to smell, and avoid mushrooms with a musty or foul odor.

Prepare the ingredients
Wash the tomatoes thoroughly, then cut them into wedges. Next, take one corn cob, remove the husk, clean the corn silk, and then cut it into pieces.
Regular tofu and silken tofu should be rinsed briefly with water and then drained. After that, cut the tofu into small square pieces.
Soak the reishi mushrooms in water for about 5 minutes, then rinse them several times with water, and finally chop them finely with a knife.

Add 150 grams of regular tofu, 200 grams of silken tofu, and 100 grams of finely chopped reishi mushrooms into a bowl. Then season with: 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, 1 piece of fermented tofu, 1 tablespoon of soybean paste, and 2 tablespoons of tapioca flour.

Mix the tofu and seasoning well, add 2 tablespoons of annatto oil for color. Then add Vietnamese coriander to create aroma and simmer the vegetarian crab soup for 15 minutes.
