How to choose delicious grapefruit
- When buying, you should choose grapefruit with shiny, firm, yellowish skin. When you hold it, it should feel heavy, and the skin should still be fresh, not dry.

After that, soak the grapefruit peel in the salt and alum mixture for 8 hours. After 8 hours, squeeze the grapefruit peel by hand and continue to rinse and squeeze the pulp with clean water 6 times.
Next, mix 200 grams of grapefruit peel with 10 grams of sugar and 50 grams of tapioca starch, ensuring the starch coats evenly.

Prepare and cook green beans
You soak the green beans in clean water for 30 minutes. Next, you will put 50g of green beans into the pot and boil it with 10g of pandan leaves and a pinch of salt, when the water boils, add 170g of sugar.

Boil grapefruit peel
You put a pot of water on the stove, bring it to a boil, then add 200g of grapefruit peel and boil for 5 – 7 minutes, when you see the grapefruit peel floating, you take it out to drain.

Cooking grapefruit with mung beans
Next, you add 200g of boiled grapefruit peel into the pot of mung beans that is cooking. You should dilute 10g of tapioca starch with 100ml of water, then add half of the mixture into the pot of dessert.
With 200ml of coconut milk, you put it on the stove and cook with 5g of salt, 10g of sugar, 10g of pandan leaves, and add the remaining diluted tapioca starch until the coconut milk boils again.
